50 yr old vines, de-stemmed, indigenous yeast fermentation, 3-5 days post-fermentation maceration (15 days total with punch-downs). Aged for 12 months in older oak barrels.
Organic, handpicked, carefully sorted, and naturally fermented before aging French oak barrel for 10 months. Bottled unfined. It’s silky and darkly fruity, a bit of vanilla on the nose follows through on the palate of cherries & blackberries.
Pinot Noir sourced from the lieu-dit of Les Clos . The fruit tends to ripen early due to its excellent southern exposure. Full of character, black ripe berries, and spicy, brambly notes.
