Vermouth

A base of unfiltered apple cider blended with white wine & flavored with fruits like cherry, orange peel, & lemon, plus cinchona, wormwood, thyme, vanilla, artemisia, coriander, gentian etc. Kind of vermouth meets mead meets sherry meets amaro.

Late picked Assyrtiko from Megalochori, 12 hours on skins. Rich, powerful, but fresh. Aged one year in old French oak; sweet, honeyed, ripe. 15% abv but holds it well. Age-worthy. Pair w/grilled meat, cheese plates.

The Agiorgitiko grapes for this wine come from the hills surrounding Nemea. It's a dry, medium-bodied red with earthy, dark fruit and light tannins on the finish.

Skin contact Moschofilero, spontaneous yeast fermented, unfiltered, with only a dash of SO2 at bottling. Dry, floral, spicy.
