Honeysuckle, lemon, & lanolin on the nose. Racy, briny, lime-zest acidity on the palate; finishes with toast, nuts, & hints of fino sherry. 12% abv.
Varietal: Palomino Fino
Vineyard: The Macharnudo Alto plot is extremely old - first given to Don Valdespino in 1264. All work is done by hand and no chemicals are used. The vineyard faces south east with an inclination of 10 degrees and at an altitude of 135 meters high.
Soil: Albariza or a white chalky soil. When wet it sheds water to deeper soils and as it dries it "clods" creating a protective layer that slows the evaporation of water from below.
Pruning: The vines are bush pruned in the traditional method of vara y pulgar.
Vinification: Naturally fermented in cask.
Aging: The wine is aged under flor for a few months before being bottled.
Organic Palomino Fino fermented in sherry casks and aged under flor for 6 months. A must for seafoo..
