PELO is a tribute to my grandfather, Pierre, who very early introduced me to wine and who is at the origin of the project to take over parcels of Montbenault. A great lover of Saint-Emilion, it was therefore natural to name the only cuvee of red (100% Cabernet Franc) by his nickname.
The vines of the plot "le Bordage" (0.4 ha) are about 60 years old with some rows of young vines (13 years old)
Most of the grapes were hand-picked with a small percentage of whole grapes (10%) and lightly tamped. Maceration in the tank (fiber) 17 days without extraction (no pigeage or remontage) until the end of fermentation. Light pressing to avoid extracting drying tannins.
12.5% vol. / pH: 3.67 / 0.2g of residual sugars / non-filter / 1.5g / hlL of sulfur before bottling
