Laurent Herlin worked as a computer engineer for 12 years before dropping that career in 2008 and dedicating himself to wine. After taking classes in Beaune and working at various domaines, he purchased 5 hectares in Bourgueil, which he farms biodynamically. All of his wines are from hand-harvested grapes that are sorted twice (once in the vineyard, then in the cellar), fermented with indigenous yeast, and are bottled unfiltered, unfined, and with no added sulfites.
Importer's note: Tsoin Tsoin is 20% Gamay, 80% Cabernet Franc. Laurent makes this lovely, easy-drinking light red wine from 35-year old biodynamic Cabernet Franc vines in Bourgueil on stony soils, blended with 5 year old Gamay planted to clay. After a manual harvest, they are carbonically macerated for 15 days, separately fermented using indigenous yeasts, and then quickly bottled unfined and lightly filtered. The result is a wine that tastes of light red fruits backed by a tangy mineral backbone ending in a long finish. It's happiness in a bottle.
