18 hectare estate in the heart of Chablis run by husband and wife team Catherine and Louis Poitout, who both inherited vines and combined their holdings to create this domaine. They make small-production wines with minimal impact on their environment, with the intent to “respect and preserve the local flora and fauna”. They have sole access to perhaps the oldest plot of vines in Chablis — own-rooted, pre-Phyloxera Chardonnay vines that somehow survived the blight that wiped out most of the vines across Europe.
Importer's note: This light, crisp, refreshing white comes from 27+ year old vines of Chardonnay planted in Tonnerre, grown on South East-facing clay/chalky soils, lightly fined/filtered, all in stainless. As with all of Louis' work, purity is the word to remember when tasting his wines. This is one of the truest expressions of Chardonnay from Tonnerre one can find, and absolutely delicious.
