La Encomienda de Cervera Estate was created in 1758; originally it had olive groves with over 2,000 olive trees, an oil press, a country house, and about ten thousand black and white poplars. By the end of the 19th century they had 22 hectares of vineyard as well, now up to 50. The vineyards are situated at 750-850 meters above sea level, and planted amongst oak trees and junipers, rosemary, & thyme, and atop the black volcanic soils for which the area is known.
