Caburnio is 55% Cabernet Sauvignon, 20% Merlot, 15% Alicante Bouschet, 5% Petit Verdot, and 5% Cabernet Franc. It’s matured for 14 months, 50% in steel and the remaining 50% in French oak barriques and tonneaux, 30% of which is new and 70% of second or third use. It’s then aged for another 12 months in bottle. There is no fining of filtering.
Full-bodied, well-structured, and loaded with cherries, cassis, and plums, but all that fruit is balanced by savory earthy notes, a touch of dried roses, and underbrush. Tannins are fine-grained, acidity is fresh and lively, aging potential is up to 15 years.
